Tuesday is generally designated as fiesta night at my house. While tacos appear on my menu fairly often, there are times that I like to shake things up and do something a little different. When I need a change of pace, I opt to make a batch of those amazing Sheet Pan Quesadillas you see above.

Sheet Pan Quesadillas are ridiculously easy to make and you can easily customize the filling so you can have a completely different meal every time you make them.

As far as the meat, sometimes I will use seasoned ground beef or ground turkey. Other times I fill the quesadillas with chicken or pork. Then there are times when I leave out the meat entirely.

And when it comes to the other fillings, I will add black beans, pinto beans or refried beans—whatever is handy. But a must-have in every quesadilla recipe I make is a package of Knorr Rice Sides. Delicious and super easy to prepare, that seasoned rice adds the perfect flavor no matter what else I add to the quesadilla.

Take advantage of the savings and grab what you need to serve up some tasty Sheet Pan Quesadillas for your next Fiesta Night at home! This dish is super hearty and can feel a lot of people with ease. I find that it’s the perfect meal if you have visitors. Droves of teenage boys seem to magically appear at my house around dinnertime. I can make two pans of quesadillas and feed a small army, all without a ton of time or effort!

If you haven’t made Sheet Pan Quesadillas before, you are going to love how easy they come together. Start by spraying a sheet pan with cooking spray and lining it with large tortillas.

From there you just pile on the toppings. The recipe I am sharing includes some of our favorites … Knorr Mexican Rice, chicken, black beans, corn, bell pepper, onion and cheese.

Once you have everything loaded into the pan, you just fold the tortillas over the filling. Spread a little butter or olive oil over the top of the tortillas then top with another sheet pan and pop it in the oven and in about 25 minutes, you have a delicious meal that is sure to please!

Sheet Pan Quesadillas

Ingredients
  

  • cooking spray
  • 10 large flour tortillas
  • 2 cups cooked chicken - cubed
  • 3 tbsp taco seasoning
  • 1 pkg Knorr Mexican Rice Sides - cooked according to package instructions
  • 15 oz can of black beans - rinsed and drained
  • 15 oz can of corn - drained
  • 1/4 cup red onion - chopped
  • 1/4 cup bell pepper - chopped
  • 3 cups monterey jack cheese - shredded
  • 1 tbsp melted butter
  • preferred toppings including sour cream, guacamole, pico de Gallo, cilantro, etc

Instructions
 

  • Preheat oven to 425º.
  • Spray one 8" x 13" sheet pan with cooking spray and place 8 tortillas into the pan. Start by placing 6 tortillas around the perimeter of the pan, overlapping each and allowing them to overhang the side of the pan. Place two additional tortillas down the middle of the pan. Ensure the bottom of the pan is completely covered with the tortillas.
  • Cook the Knorr Mexican Rice Sides according to directions and add to a large bowl with the cooked chicken, taco seasoning, black beans, corn, bell pepper and onion then mix to combine.
  • Spread the filling over the prepared tortillas.
  • Place two additional tortillas atop the filling, down the middle of the pan. Then fold the overhanging tortillas over the filling, overlapping to completely cover the filling.
  • Brush the tops of the tortillas with melted butter and place a second sheet on top of the tortillas.
  • Bake at 425º for 20 minutes. Remove the top pan and bake for another 8 - 10 minutes, until the top is golden and crispy.
  • Remove from oven, cool slightly then slice and serve with your preferred toppings.

    It is not an easy to throw together dish. It could be my oven , but it got too crispy and was difficult to cut. The flavor was okay with added toppings. I would not make again.
