When I need a night out of the kitchen, I like to visit my local Mexican restaurant. It’s easy, convenient and I can get a tasty meal in a flash. But, a meal for four is NOT cheap. One night out can cost as much 3 or 4 meals made at home.

Loaded with beef, beans, cheese, and stuffed to the max with delicious Knorr Taco Rice, this is the perfect meal for a busy week night and a great alternative to the usual Taco Tuesday. You get all the flavor you love and prep is only a few minutes more than your basic taco recipe.

Plus, it’s a great way to get your family to help in the kitchen. I’ll get everything prepped and then have my guys create an assembly line. It’s almost like an at-home burrito joint. I add the meat then pass it down to my husband who adds the Knorr Taco Rice. From there he pushes the burrito to Jake who spoons in beans and shredded cheese. Finally, the burrito goes to Jeb where it’s wrapped and placed in a casserole dish. In a matter of minutes, we have six burritos that are stuffed and ready to go.

All that’s left is to smother the whole thing in enchilada sauce and more shredded cheese. A few minutes in the oven to melt the cheese and it’s time to ring the dinner bell.

Smothered Burritos

Ingredients
  

Taco Rice

  • 1 pkg Knorr Sides Taco Rice
  • 2 cups water

Burritos

  • 1 lb lean ground beef
  • 1 small onion - chopped
  • 1 packet taco seasoning
  • 2/3 cup water
  • 6 large burrito-size flour tortillas
  • 15 oz canned black beans - drained and rinsed
  • 8 oz shredded cheese - I like a Cheddar Jack
  • 10 oz canned enchilada sauce

Instructions
 

Taco Rice

  • In medium saucepan, bring 2 cups water and contents of package to a boil. Stir. Reduce heat and simmer covered 7 minutes or until rice is tender. Set aside

Burrito

  • Preheat oven to 400º F.
  • Pour 1/4 cup of the enchilada sauce in the bottom of a 13"x9" casserole dish. Set aside.
  • While the rice cooks, brown the ground beef with the onion in a skillet, stirring to crumble as it cooks. Drain any excess fat.
  • Add the taco seasoning and water and cook for 2 - 3 minutes, until most of the water is absorbed.
  • To assemble the burritos, spoon the prepared beef down the center of each tortilla.
  • Next, spoon the beans and prepared Knorr Sides Taco Rice over the beef. Top with the shredded cheese, reserving 1/4 cup for the top of the burritos.
  • Fold in the sides of the tortillas and and then roll to wrap the burritos and secure the filling. Place in the prepared casserole dish.
  • Pour the remaining enchilada sauce over the burritos and sprinkle with remaining cheese.
  • Bake for 10 minutes, until hot and cheese has melted.
  • Serve and enjoy!
