It just wouldn’t be the holidays without lots of sweet treats.

While I like to shake things up each year and try out new recipes, there are some things that I make each and every year without fail. Peanut Brittle is at the top of that list.  The combination of sweet and salty with that perfect candy crunch really just can’t be beat.

This classic holiday treat takes me back to my childhood. I remember stacks of holiday tins packed with that golden goodness that we’d enjoy all season long.

Now I am continuing the tradition and pack up my own holiday tins with that amazing brittle. I would estimate that I probably make eight to ten batches to enjoy AND gift to friends and family.

Peanut Brittle is not hard to make, but it does require a little patience. To get started, you want to grab a candy thermometer and some PLANTERS® Peanuts. Measure out all your ingredients and have everything ready so once your candy reaches temperature, you can work quickly.

A little bit of time and a few ingredients is all that’s needed for amazing taste.

Planters Peanuts, 12 or 12.5 oz, or 10-pk, 1 oz, BOGO 

Peanut Brittle

Prep Time 15 minutes
Servings 20

Ingredients
  

  • 1 1/2 tsp baking soda
  • 1 tsp water
  • 1 tsp vanilla
  • 1 1/2 cups sugar
  • 1 cup water
  • 1 cup light corn syrup
  • 3 tbsp butter
  • 16 oz jar PLANTERS® Salted Dry Roasted Peanuts

Instructions
 

  • Heat oven to 200°F. Spray 2 large, rimmed baking sheets with non-stick cooking spray. Place in oven to keep warm.
  • In small bowl, mix baking soda, 1 teaspoon water and the vanilla; reserve.
  • In medium saucepan, over medium heat, combine sugar, 1 cup water and corn syrup. Cook over medium heat, stirring occasionally, to 240°F on candy thermometer or until small amount of syrup dropped into very cold water forms a soft ball that flattens when removed from water.
  • Stir in butter and peanuts. Cook, stirring constantly, to 300°F or until small amount of mixture dropped into very cold water separates into hard, brittle threads. (Watch carefully so mixture does not burn.) Immediately remove from heat. Quickly stir in baking soda mixture until light and foamy.
  • Pour half the candy mixture onto each warmed sheet; quickly spread about 1/4 inch thick. Cool completely, at least 1 hour. Break into pieces. Store in covered container.
