Let me introduce you to a meal that you are going to want to eat at least one per week… my Roasted Veggie & Sausage Quinoa Bowl with Tahini Dressing. I know, the name is a mouthful —but every single item combines for the most amazing flavor, I just didn’t want to leave anything out!

It’s packed with great flavor and texture and really might be the perfect meal. You get your protein, veggies and grains in an easy-to-prepare meal that you can put together in a flash. A little bit of prep is all that is needed, then the oven does most of the work for you. Heck, you could even prep everything ahead of time then pop it in the oven when you get home. It’s an ideal meal for a busy weeknight.

The recipe that I am sharing is my ideal version of this dish, but you can absolutely switch it up based on your preferences.  I like mine with sweet potatoes, but you could absolutely use regular potatoes, butternut squash or really any root veggie that you love.

No broccoli on hand? Use Brussels sprouts or even cauliflower instead. Substitute green bell pepper for the red… feel free to change it up and make it your own.

But, one thing that you won’t want to change is the sausage. I choose Eckrich Smoked Sausage for my recipe because it has just the right blend of spiced and is naturally hardwood smoked for great flavor every time. The tender texture pairs perfectly with the roasted veggies for a meal that your whole family will absolutely love.

I try to keep a couple of packages handy so that I can whip up a tasty meal whenever I need it. Eckrich Smoked Sausage is fully cooked so I can simply heat and serve for great taste in a flash. A few tips to ensure this dish comes out perfect is to cut everything to the correct size.

The sweet potatoes really need to be cut into bite sized cubes about 1/2-inch in size to ensure they are fully cooked. If the chunks are too big, they will not be tender. And the broccoli need to be left a little bit larger. If you create tiny florets, they will be overdone and become charred.

For the sausage, I generally cut each rope in half lengthwise and the slice into bite size portions. Ultimately, everything needs to be the average bite size to ensure that it all cooks evenly. Put those knife skills to work and you’ll end up with amazing flavor every time!

 

Roasted Veggie & Sausage Quinoa Bowl with Tahini Dressing

Ingredients
  

  • 2 cups sweet potatoes - chopped into bite size pieces
  • 2 red bell peppers - cut into chunks
  • 2 cups Broccoli Florets
  • 15.5 oz can of chickpeas - drained and rinsed
  • 14 oz Erckrich Smoked Sausage - cut into chunks
  • 1 onion - sliced thick
  • 3 tbsp olive oil
  • 3 cups prepared quinoa
  • 2 tsp ground cumin
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp kosher salt

DRESSING

  • 1/4 cup tahini
  • 2 tbsp fresh lemon juice
  • 1 tbsp maple syrup
  • 1 tsp sesame oil
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves - minced
  • 2 - 3 tbsp water
  • salt - to taste

Instructions
 

  • Preheat oven to 400º F.
  • Combine the spices (cumin, garlic powder, chili powder, salt and paprika) in a small bowl and mix to combine. Set aside.
  • Place the sweet potatoes, broccoli, bell pepper, onion, chickpeas and Eckrich Sausage in a large bowl and drizzle with the olive oil and prepared spice blend. Toss to coat.
  • Evenly spread the veggie/sausage mixture on a large sheet pan, ensuring nothing is overlapping. Bake at 400º for 20 - 25 minutes, until the sausage is browned and veggies are crisp/tender.
  • While the mixture bakes, prepare the dressing by adding the tahini, lemon juice, sesame oil, maple syrup, olive oil and garlic to a small bowl and whisk to combine. Gradually add water until the dressing it pourable or to desired consistency. Taste and season with salt as needed.
  • To serve, place 1/2 cup of prepared quinoa in a bowl and top with the veggie/sausage mixture. Drizzle with the prepared tahini dressing. Serve and enjoy!
