Sage & Sweet Potato Hasselback Pork Tenderloin – Perfect Weeknight Meal That Is Sure To Impress!

What’s on your menu tonight? With very little time and effort, you could serve up an AMAZING meal like my Sage & Sweet Potato Hasselback Pork Tenderloin.

This tasty dish has everything going for it. The presentation is just beautiful, making it ideal for a dinner party. And the taste… well, it’s ridiculously good. Think bacon and sage stuffed into a pre-seasoned Hatfield Pork Tenderloin along with slices of sweet potato. All that goodness is then topped with a sweet & savory apricot glaze! Is your mouth watering yet?

And while that sounds like it would be time consuming and cumbersome, it’s actually super simple to prepare. In fact, this dish comes together in a flash. If you have good knife skills, the prep is maybe 10 minutes and then there is less than 40 minutes of bake time. That means, you can serve this up any night of the week with ease!

To get started, just grab a Hatfield Tuscan Herb Dry Rub Seasoned Pork Tenderloin and a sharp knife.

Place a couple of chopsticks on either side of the tenderloin then make slices every 3/4-inch down the length of the pork. The chopsticks act as a barrier preventing you from slicing through the pork so that you can stuff the pork with lots of other good stuff!

Once you have your pork sliced, cook up some chopped Hatfield Bacon with fresh sage. That amazing combination gets stuffed down into each of the slices you made in the pork along with sliced sweet potato.

Pop the stuffed pork on a sheet pan and bake at 375º F for about 35 minutes. As the pork cooks, you can throw together a simple apricot glaze by heating apricot preserves with some sherry cooking wine and dijon mustard. That delicious glaze gets spooned over the pork during the last 5 minutes of cook time.

You won’t have to bother calling your family up for dinner. The amazing smell will have them running to the dinner table.

Pop this baby on the table and watch as everyone oohs and ahhhs over how great it looks. Then go ahead and give yourself a pat on the back… no one has to know how ridiculously easy this is to prepare.

Sage & Sweet Potato Hasselback Pork Tenderloin

Prep Time 10 minutes
Cook Time 35 minutes

Ingredients
  

  • 1 Hatfield Tuscan Herb Dry Rub Seasoned Pork Tenderloin
  • 1 - 2 small sweet potatoes - sliced 1/4-inch thickness
  • 3 tbsp fresh sage - roughly chopped
  • 6 slices Hatfield Bacon - chopped
  • 1/4 cup apricot preserves
  • 1-1/2 tbsp sherry or sherry cooking wine
  • 1 tbsp dijon mustard

Instructions
 

  • Preheat oven to 375º F.
  • Fry the bacon until crispy, adding the sage during the last 3 minutes of cooking. Remove to a paper lined plate to drain.
  • Create thin slices down the length of the pork tenderloin (approx 3/4 inch apart) without cutting all the way through. Tip - place two chopsticks on each side of the pork and allow them to be the stop for the knife as you slice down.
  • Push the cooked bacon and sage mixture down into each of the slits in the pork.
  • Slide the sliced sweet potatoes down into the slits with the bacon mixture.
  • Place the stuffed pork on a baking sheet and bake at 375º F for 30 minutes.
  • While the pork cooks, add the apricot marmalade, sherry and dijon mustard to a small saucepan and stir. Cook over medium heat for 3 minutes, or until bubbly. Remove from heat and set aside.
  • After the pork has cooked for 30 minutes, pour the glaze over the top and return to the oven to cook for an additional 5 minutes.
  • Remove from oven, slice and serve.
