Grilled Peach & Blue Cheese Salad
Ingredients
- 2 cups mixed salad greens
- 3 oz Castello® Blue Cheese - crumbled
- 2 tbsp toasted or candied pecans - crumbled
- 2 peaches -cut into wedges
- 1 tbsp olive oil
- 1/4 cup blueberries
- 1/4 small red onion -thinly sliced
- 2 tbsp pomegranate arils
- 1/4 cup lemon vinaigrette
Instructions
- Preheat grill to medium high heat.
- Brush the peach wedges with olive oil and place on the hot grill.
- Grill for 2 - 3 minutes per side, until lightly charred.
- Layer the grilled peached on a bed of salad greens and top with the pomegranate arils, red onion, chopped pecans, blueberries and Castello® Blue Cheese.
- Drizzle with lemon vinaigrette and serve.
