Grilled Peach & Blue Cheese Salad

Ingredients
  

  • 2 cups mixed salad greens
  • 3 oz Castello® Blue Cheese - crumbled
  • 2 tbsp toasted or candied pecans - crumbled
  • 2 peaches -cut into wedges
  • 1 tbsp olive oil
  • 1/4 cup blueberries
  • 1/4 small red onion -thinly sliced
  • 2 tbsp pomegranate arils
  • 1/4 cup lemon vinaigrette

Method
 

  1. Preheat grill to medium high heat.
  2. Brush the peach wedges with olive oil and place on the hot grill.
  3. Grill for 2 - 3 minutes per side, until lightly charred.
  4. Layer the grilled peached on a bed of salad greens and top with the pomegranate arils, red onion, chopped pecans, blueberries and Castello® Blue Cheese.
  5. Drizzle with lemon vinaigrette and serve.
