Creamy Spinach & Artichoke Pasta with Sausage

Ingredients
  

  • 8 oz cooked pasta - any variety
  • 3 links Carando Sweet Italian Sausage
  • 1 tsp extra virgin olive oil
  • 1/2 onion - chopped
  • 1 clove garlic - minced
  • 9 oz fresh spinach
  • 14 oz canned artichoke hearts -quartered
  • 2-1/2 cups jarred Alfredo sauce
  • 1/2 cup cherry tomatoes -halved

Instructions
 

  • Grill the Carando Italian Sausage according to directions (cooking 15 to 20 minutes over medium low heat) then set aside.
  • Meanwhile, heat the olive oil in a large skillet over medium heat and cook the onions for 3 - 5 minutes, until translucent.
  • Add the garlic and cook an additional 1 minute, until fragrant.
  • Add the spinach and cook another minute, until wilted.
  • Stir in the cooked pasta, Alfredo sauce and artichoke hearts and cook until heated through.
  • Slice the prepared Carando Sausage and stir into the pasta.
  • Top with sliced cherry tomatoes and serve.

  1. To streamline this even more, use the Spinach Artichoke dip from the deli for more creaminess and taste. You can eliminate cooking the spinach and atichokes, unless you just want more spinach/artichokes in the dish. I use that dip in many recipes as a shortcut. Love your recipes and hints. Thanks!
