Tuscan Pork Shepherd’s Pie

  • 1 tablespoon olive oil
  • Hatfield Tuscan Herb Dry Rub Seasoned Pork Tenderloin, diced into bite size pieces
  • 1 tablespoon butter
  • 8 oz sliced mushrooms
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1/2 teaspoon fresh thyme, chopped
  • 1 1/2 cups frozen peas and carrots
  • 1 1/2 cups chicken broth
  • salt and pepper to taste
  • 2 tablespoons corn starch
  • 2 cups mashed potatoes
  • 1/4 cup cheddar cheese, shredded
  1. Preheat oven to 350ºF.
  2. Heat the oil in skillet over medium high heat.
  3. Sauté the pork until browned then remove to plate.
  4. Add the butter to the same pan then cook the mushrooms, onion and garlic until the veggies are soft, approximately 5 minutes.
  5. Add the cornstarch to the chicken broth and whisk to combine.
  6. Sir in the peas, carrot, thyme and the chicken broth mixture and simmer for for 3 – 5 minutes until thickened.
  7. Season with salt and pepper to taste.
  8. Add the pork back to the mixture then spoon into a 2 quart greased casserole dish.
  9. Pipe or spread the the mashed potatoes over the pork mixture and sprinkle with the cheddar cheese.
  10. Bake for 45 minutes.
  11. Serve and enjoy!

    • Yep—the cornstarch slurry will thicken up the sauce nicely.
      AND–I always let mine sit for about 10 minutes before serving (b/c it is obviously too hot to eat right from the oven) and it gels a little more 😉
