A family favorite meal here at my house is my Mojo Chicken & Mango Rice recipe. The taste is ridiculously good and it’s incredibly simple to prepare. It combines the ease of a sheet pan meal with quick cooking Garden & Grains™ White Rice, Black Beans, Corn & Bell Peppers blend for a meal that requires very little effort.
Notice that you don’t need a lot of ingredients. That’s because one of the perks of using Garden & Grains™ blends is that you have all the veggies included. And to save even more time, I use a pre-made mojo marinade and get the chicken set up early. That way when dinner time rolls around, my prep is minimal. I would estimate that your hands on prep time to be well under 10 minutes for this dish. That’s sure to be a winner for a busy weeknight!
- CHICKEN
- 1 1/2 cups prepared mojo marinade
- 4 chicken leg quarters (or your favorite chicken parts)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large onion, sliced
- 1 – 2 oranges, sliced
- MANGO RICE
- 1 bag Success Garden & Grains White Rice, Black Beans, Corn & Bell Peppers, prepared according to package directions
- 1 tablespoon mojo marinade
- 1 cup mango, cubed
- 3 tablespoons red onion, chopped
- 1/4 cup fresh cilantro, chopped
- juice and zest of 1 lime
- salt and pepper to taste
- Place the chicken in a bowl with the mojo marinade and mix to coat.
- Cover bowl and refrigerate for up to 8 hours.
- Preheat oven to 350º F.
- Place the chicken with any extra marinade, onions and orange slices on a large sheet pan. Sprinkle the chicken with salt and pepper.
- Bake at 350º F for 50 – 60 minutes, or until chicken is cooked through.
- Meanwhile, prepare the Success Garden & Grains White Rice, Black Beans, Corn & Bell Peppers blend according to package directions.
- Add the rice blend to a large bowl and allow to cool slightly.
- Once cooled, add the mojo marinade, mango, red onion, cilantro, lime juice and zest and stir to combine. Season with salt and pepper to taste.
- Serve the rice topped with the chicken and roasted onions.
- Garnish with additional chopped cilantro, if desired.
