I’ve mentioned before how much I enjoy a nice caprese salad. Besides being visually appealing, the traditional combination of flavors is as bright and striking as the dish itself. I also love how simple it is. With just a few common, easy to find ingredients, you can create a delicious appetizer that will have people coming back for more.

One of the fun things about a caprese salad, though, is that because there’s no cooking involved, it’s not hard to tweak the recipe and make it your own. So why not shake things up completely? With this Citrus Caprese recipe, all you have to do is swap the tomato for fresh citrus slices and the olive oil for some honey and you’ve turned a savory salad into a sweet treat the whole family can enjoy.

Serves: 4 – 6
Ingredients
  • (2) 8 oz. Galbani Fresh Mozzarella Balls or 16 oz. Log
  • 1/2 cup white balsamic vinegar
  • 1 tsp. fresh orange juice
  • 1 tsp. honey
  • 1/4 cup sliced almonds
  • 1/2 tsp. cinnamon
  • 1 tbsp. sugar
  • Assorted oranges (cara cara, navel, blood oranges), peeled and sliced
  • 1 bunch fresh basil
  • Extra virgin olive oil
Instructions
  1. Heat vinegar, orange juice, and honey over medium heat until bubbling. Lower heat to medium-low and reduce.* Take off heat and set aside.
  2. Toss almonds with cinnamon and sugar. Bake for 6 minutes. Set aside.
  3. Arrange orange and fresh mozzarella slices in overlapping layers on a platter.
  4. Drizzle balsamic reduction over mozzarella and oranges.
  5. Sprinkle with toasted almonds, garnish with fresh basil, and drizzle with olive oil to taste.

For this unique take on a caprese salad, it all starts with Galbani 1882 fresh mozzarella cheese.

However, there is nothing to which your use of the asterisk refers. Please clarify. Thank you
