Make A Batch Of Easy Ice Cream Bars And Save On Breyers Ice Cream At Publix!

It’s obvious that we’re on the back end of summer. The days are getting shorter, and with back to school season in full swing, we’re all starting to look ahead on the calendar.

But why not stop and enjoy the moment and try to extend some summer fun?!  Why not pull out a few ingredients and whip up a batch of my Easy Ice Cream Bars?!

An ice cream bar screams summer fun. And while they might look complicated, they are incredibly simple to prepare. Pick out your favorite Breyers flavor, grab some chocolate chips, coconut oil and sprinkles and you can have a summer treat that just can’t be beat! And because you don’t need bowls or utensils, they’re the perfect indoor or outdoor treat anytime you need it.

The first step is to line a bread pan with some plastic wrap. The wrap is just there to help you pull out the ice cream when it’s time to cut the bars.

Once prepared, just fill your bread pan with your favorite Breyers Ice Cream flavor. I decided to go with Breyers Cookies & Cream. You just can’t beat Breyers vanilla loaded with cookie pieces. In fact, there’s now with 20% more cookie pieces… sounds like the perfect ice cream bar to me!

Then place a piece of parchment paper over the ice cream and insert 16 popsicle sticks through the parchment and down into the ice cream.

Now, I like to be exact so I will pull out my ruler and mark off lines on the parchment to create 16 even-sized rectangles. If you are feeling adventurous, you can skip that step.

Now, the whole pan goes back into the freezer for at least 6 hours or overnight to ensure the ice cream hardens. Once it’s all set, pull out a sharp knife and cut the bars.

I would recommend that you prep your ice cream dipping station BEFORE you cut your bars the first time you make this recipe. The chocolate comes together in minutes, but you want the bars as frozen as possible before you dip them.

To make the chocolate shell you just add 1 cup of chocolate chips and 3 tablespoons of cold coconut oil to a cup. Toss it in the microwave for about a minute (until melted) and then stir to combine.

Now you are ready to dip those ice cream bars.

After a quick dip in the chocolate, the next step is a dip into some colorful sprinkles and then let set up on a piece of parchment.

They take only minutes to harden and once set, it’s time to enjoy!

Just remember, you’ll want to work quickly and then return the ice cream bars back to the freezer if you are not eating them immediately.

  1. Do they taste coconut-y because of the coconut oil? I wouldn’t want that!

    • You can’t taste it at all… the chocolate is basically the same as the magic shell topping that you can buy in the stores 🙂
