I am a big fan of easy desserts. Obviously one of the all-time easiest options is ice cream. You can grab any of those delicious Breyers Ice Cream or Frozen Desserts, scoop it into a bowl and you have a delicious dessert in no time flat.

If you want another easy dessert options that kicks up that great taste a little more and is still crazy easy—you gotta try my Grasshopper Ice Cream Pie Squares. All you need is three ingredients, about 5 minutes of prep and a little bit of patience. With almost no effort at all, you end up with a tasty treat that you simply cut and serve!

Ok so my recipe may not be green like some of the other grasshopper pies you may have had. But it’s packed with big flavor and takes a fraction of the time a traditional grasshopper pie would require. I wanted a non-dairy version so I opted to use new Breyers Non-Dairy Mint Chocolate Chip. This tasty version is made with real almond milk and has the same rich and creamy taste of regular ice cream.

For a non-dairy crust, I just replaced the butter with some coconut oil and used the standard chocolate wafer cookies as they are dairy free. Make sure to double check the nutritional label on the brand you choose.

Just crush the chocolate wafers and mix with the melted coconut oil and press into an 8×8″ dish. Pop the crust in the freezer for about 5 minutes while your ice cream softens.

Then just scoop out a quart of the Breyers Non-Dairy Mint Chocolate Chip and spread it over top of the cookie crust.

All that is left is to pop the dish into the freezer for about an hour until set. Sprinkle with some shaved dark chocolate or cocoa powder, then cut and serve!

For easy serving, dip the dish into about an inch of hot water for 30 seconds. Doing this will help that crust come off the pan easily. Then when it’s time to cut, dip your knife into a little hot water before cutting the squares. Just make sure to dry the knife before you cut so no water drips on your pie. That little bit of heat will make cutting these frozen treats quick and easy!

Grasshopper Ice Cream Pie Squares

Ingredients
  • 30 chocolate wafer cookies, crushed
  • 4 tablespoons coconut oil, melted
  • 1 quart Breyers Non-Dairy Mint Chocolate Chip Frozen Dessert, softened slightly
Instructions
  1. Mix the crushed cookies with the melted coconut oil and press into the bottom of an 8×8″ glass dish.
  2. Freeze the crust for 5 – 10 minutes, until set.
  3. Evenly spread the Breyers Non-Dairy Mint Chocolate Chip Frozen Dessert over the cookie crust and freeze for 1 hour, or until set.
Notes
TIP: For easy serving, dip the dish into about an inch of hot water for 30 seconds. Then when it’s time to cut the squares, dip your knife into a little hot water and wipe away the water before cutting.
