- Kosher salt
- 1 Tbsp olive oil
- 1 lb. spicy Italian sausage, casings removed
- 2 garlic cloves, minced
- 1 tsp. chopped fresh rosemary
- 1/4 cup tomato paste
- 1/2 cup dry white wine
- 1/4 cup whole milk
- 3 Tbsp chopped flat-leaf parsley
- 10 oz. Ronzoni Cauliflower Penne
- Grated parmesan for serving
- Bring a large pot of salted water to a boil.
- Heat the oil in a large skillet over medium high heat.
- Crumble the sausage into the pan and cook, breaking up clumps with a wooden spoon, until well browned, 6 to 8 minutes.
- Add the garlic and rosemary and cook, stirring, 1 minute.
- Add the tomato paste and cook, stirring 2 minutes.
- Add the wine and simmer until reduced by about half.
- Add 1 cup of water and the milk and bring to a boil.
- Reduce the heat and simmer, stirring occasionally and continuing to break up clumps, until slightly thickened, about 6 minutes.
- Stir in the parsley.
- While the sauce is simmering, cook the cauliflower penne according to package directions.
- Spoon ragu onto the pasta and serve with grated parmesan.
