My guys love breakfast foods AND they love a good casserole, so that slice of heaven that you see above is their idea of a perfect meal.

I happen to be a big fan of this dish as well…for the taste and the fact that it’s so easy to prepare. With this casserole, you make it the day before and then bake it up when you need it. Obviously with the festive colors, it’s the ultimate Christmas morning meal that you can prep in advance and bake up when you wake up on Christmas Day. BUT…I happen to love it for a regular weekend OR weeknight meal.

Yes, you’ll notice that I said weeknight meal.

Breakfast for dinner is one of the most popular meals that I make. When I know I am going to have a hectic day, I make life easy by making this breakfast casserole! Made with the great taste of Purnell’s Sausage, it really is the perfect meal that your whole family will love.

  • Purnell’s “Old Folks” Medium Country Sausage
  • Purnell’s “Old Folks” Hot Country  Sausage
  • Purnell’s “Old Folks” Italian Sausage

Grab a couple of rolls of that tasty sausage and a few additional ingredients and you are on your way to a delicious casserole that’s easy to make and packed with AMAZING flavor.

Ingredients
  • 2 lbs Purnell’s “Old Folks” Sausage (1 lb Hot and 1 lb Medium)
  • 1 (5oz) pkg herb seasoned croutons
  • 2 cups shredded cheddar cheese
  • 2 cups shredded cheddar, colby, monterey, pepper jack cheeses, etc. (your choice)
  • 1/2 chopped onion
  • 8 eggs
  • 2 cups half and half cream
  • 1 1/2 cups milk
  • salt and pepper, to taste
  • 1 red and 1 green bell peppers, chopped
Instructions
  1. Cook sausage and onion in large skillet until browned. Drain, crumble and set aside.
  2. Spread croutons on bottom of lightly greased 9 x 13 baking dish.
  3. Cover croutons with cheese.
  4. Sprinkle cooked sausage and onion over cheeses.
  5. Top with the chopped bell peppers.
  6. In a bowl, beat together eggs, cream, milk, salt and pepper. Pour over sausage. Cover and refrigerate for 8 hours/overnight.
  7. Bake at 350°F for 60 – 90 minutes, or until center begins to set.
  8. Let stand 20 minutes before serving.

This recipe is crazy simple…even a novice in the kitchen can put this one together and have it come out perfectly every time.

To get started, you just cook a couple of rolls of Purnell’s Sausage with a chopped onion. I think a roll of medium and a roll of hot is the perfect combination. But, you can feel free to adjust based on your taste buds. I think two rolls of hot would be amazing…but I have to keep my boys in mind. Jake is a little more sensitive to spice than the rest of us.

From there you start assembling the casserole.

Spray your casserole dish with cooking spray and then add all of the seasoned croutons to the bottom of the dish.

Christmas Breakfast Casserole on I Heart Publix 5Next is a layer of cheese. Start with some cheddar and throw in any other favorites you might have. It might be a good time to use up any extra that you have in your fridge. At my house there’s no such as too much cheese.

The next layer is the good stuff…that tasty Purnell’s sausage that was browned with the onion. Just spread it evenly over the crouton/cheese layers.

Next comes the color! Sprinkle those festive red and green bell pepper over the top. All that color is perfect for the holidays.

Christmas Breakfast Casserole on I Heart Publix 7Finally you pour the liquid mixture (egg, cream, milk, salt and pepper) over the top and then cover with foil. Toss the whole dish in the fridge and let it sit overnight.

The next day, you just bake it up and you end up with the most amazing dish that’s packed with such great flavor. It’s sure to be a hit on Christmas morning or anytime you want great taste.

The actual prep time is pretty minimal making this a great option when you need a tasty meal with very little effort.
