- 1 pkg Pure Farmland Breakfast Patties, cooked according to package instructions
- 6 eggs, whisked
- 2 tablespoons onion, chopped
- 2 small bell peppers, chopped
- 1 tablespoon cilantro, chopped
- 1 cup cheddar cheese, shredded
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon ground cumin
- Preheat oven to 350º F.
- Spray a muffin tin with cooking spray (or line with silicon baking cups).
- In a large bowl, whisk together the eggs, onion, bell pepper, cilantro, cheese, salt, pepper and cumin.
- Place a precooked Pure Farmland Breakfast Patty in the bottom of the each muffin cup and pour the egg mixture over the patty, filling up each muffin cup.
- Bake for 25 - 30 minutes, until set.
- Cool slightly and serve.
