I’ll let you guys in on a little secret! Sometimes I buy more bananas than I know my guys will eat…just so I can make muffins!
I have a major weakness for banana bread and banana muffins. I have tried just about every combination of ingredients that I can think to toss in the batter. Sometimes things turn out ok and other times my experiments turn out amazing. Today I am sharing a recipe that was beyond successful…my Special K® Chocolatey Delight Banana Muffins!
I put Special K® Chocolatey Delight in my batter and on top for the most amazing taste and texture that I think you guys will absolutely love.
- 1 cup mashed bananas (about 3 bananas)
- 2/3 cup sugar
- 1 egg
- 5 tablespoons butter, melted
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 1/2 cups Special K® Chocolatey Delight Cereal (divided)
- Preheat oven to 350º F.
- In a medium bowl, mix the mashed bananas, sugar, egg and butter until combined.
- Sift in the flour, baking powder, baking soda and salt.
- Stir until moistened – do not over mix!
- Gently fold in 1 1/2 cups Special K® Chocolatey Delight cereal.
- Scoop batter into 12 paper lined muffin cups.
- Crush the remaining cup of Special K® Chocolatey Delight cereal and sprinkle equally over top of each muffins.
- Bake at 350º F for 25 minutes.
