I decided to try the Riced Veggies in one of my favorite dishes—Avgolemono Soup! Boy oh boy, it was absolutely amazing. It may be my new favorite way to make this soup.

Ok so the name makes this sound fancy. But, it just a lemon soup with rice. You don’t need a ton of ingredients, but they come together for the most incredible flavor ever.

The soup uses ingredients that I have on hand 99.9% of the time. And I have made this recipe so many times, I can make it by heart now. I have tweaked it slightly over the years and this version is a winner for sure. So if you are looking for a meal that’s quick, easy and full of flavor, this is the perfect choice.

If you are looking for something a little more hearty, just toss in some shredded rotisserie chicken. This soup is bright and full of amazing flavor. Give it a try and let me know what you think!

Riced Veggie Avgolemono Soup

Ingredients
  • 1 teaspoon olive oil
  • 1 small shallot, chopped
  • 1 teaspoon fresh thyme
  • 5 cups chicken broth or stock
  • 7 oz bag of Green Giant® Riced Veggies Chickpea Cauliflower Blend
  • 2 egg yolks
  • juice and zest from 1 – 2 lemons (approximately 1/4 cup of juice)
  • salt & ground black pepper
Instructions
  1. Heat the oil in a large dutch oven.
  2. Add the shallot and cook for 2 – 3 minutes until translucent and tender.
  3. Add the thyme and cook another minute, until fragrant.
  4. Add the chicken broth/stock and bring to a boil.
  5. Add the Green Giant Riced Veggies then reduce heat and simmer for 9 minutes, until tender.
  6. In a medium bowl, whisk the lemon juice, zest and egg yolks. Add a ladle full of the hot soup to the mixture and whisk quickly to temper the yolks.
  7. Add the mixture to the soup and stir to combine. The soup will thicken slightly.
  8. Taste and season with salt and pepper as desired.
