Cheesy Chicken & Riced Veggies Skillet

Serves: 4
Ingredients
  • 2 teaspoons butter
  • 2 carrots, sliced
  • 1 medium onion, chopped
  • 1 cup frozen peas
  • 2 cups cooked chicken, chopped
  • 3 cups chicken broth
  • 7 oz bag Green Giant® Riced Veggies Red Lentil, Green Pea, Chickpea Trio
  • 1/2 cup half & half
  • 1 cup cheddar cheese, shredded
  • salt & pepper to taste
  • fresh parsley, chopped (if desired)
Instructions
  1. Melt butter in a large skillet and cook the onion and carrot for 2 – 3 minutes, until the onion is soft and translucent.
  2. Add the chopped chicken, peas and chicken broth to the skillet and bring to a boil.
  3. Stir in the Green Giant® Riced Veggies Red Lentil, Green Pea, Chickpea Trio.
  4. Bring to a boil and cook uncovered for 9 minutes, stirring occasionally, until most of the liquid is absorbed.
  5. Stir in the half & half and cheddar cheese, cover and remove from heat.
  6. Allow to sit, covered for 2 – 4 minutes, until cheese is melted.
  7. Season with salt and pepper as desired.
