- 1 sleeve of graham crackers, crushed (9 whole graham crackers)
- 1/4 cup brown sugar, packed
- 7 tablespoons butter, melted
- 1.75 qt Tillamook Old-Fashioned Vanilla Ice Cream, softened
- 15 oz can pure pumpkin
- 2/3 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
- In a small bowl, mix together the graham cracker crumbs, brown sugar and melted butter until combined.
- Press the crumbs into a 9″ pie plate or into the bottom of 12 small jars and set aside.
- Add the pumpkin, softened ice cream, sugar, vanilla extract and pumpkin pie spice into a large bowl and beat with a mixer until combined.
- Pour the mixture over the prepared crust (or into jars) and freeze for 4 – 6 hours until firm.
- Serve with whipped cream if desired.
