Like most kids, my boys can be very picky at dinnertime. Getting them to eat their veggies was so much easier when they were little. Now that they are bigger than me, my only hope is to serve up veggies in ways that they will enjoy. I do my best to come up with meals that I know they will eat…hopefully without complaints!

When I feel like they need a big serving of veggies, I put my Easy Vegetable Meatball Soup on the menu. This soup is absolutely amazing and crazy simple to make.

I have tried my recipe omitting the meatballs and even substituted ground beef for the meatballs. With any change that I make, my guys beg me to go back to my recipe that uses Armour Meatballs. Those meatballs give the soup the most amazing flavor and like I said before, I do what it takes to get them to eat those veggies.

The recipe is super simple to make and uses ingredients that you can keep on hand and pull out anytime you need a tasty meal without a lot of effort. I try to keep a couple of bags of Armour Meatballs tucked in my freezer with a few bags of the Publix Vegetable Soup Mix. From there it’s just a matter of raiding my pantry and I can have an amazing meal on the table in about 30 minutes.

AND, if you want to get ahead–just double the recipe and freeze the soup so you can just defrost and reheat for a super fast meal.

EASY Vegetable Meatball Soup on I Heart Publix

Easy Vegetable Meatball Soup

Ingredients
  • 1 onion, chopped
  • 1 teaspoon olive oil
  • 20 oz bag of Armour Beef Meatballs
  • 32 oz Beef Broth
  • 1 cup tomato sauce
  • 1 cup diced tomatoes
  • 15 oz Publix Vegetable Soup Mix
  • 1 bay leaf
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
Instructions
  1. Heat the olive oil in a large stockpot over medium heat.
  2. Add the onions and cook until translucent, about 2 -3 minutes.
  3. Add the remaining ingredients and cook over medium until the soup begins to boil, stirring occasionally.
  4. Reduce heat and simmer for 10 minutes.
  5. Serve and enjoy!
