Pizza is a pretty common meal at my house. Usually it’s our Friday night meal before we kick back and watch a movie. Since we have pizza about once a week, I try to vary what I serve so we aren’t having the same thing week after week.

Often the type of meal that I serve will be based on what I have on my plate. On days when I have a little time, I might whip up a batch of my homemade dough and let my guys create their own individual pizzas. Then there are nights when I am slammed and look to my freezer for a meal in a pinch.

Our meals don’t always include the traditional round pizza pie. To keep things interesting I go with tasty options like this recipe for Sausage Pepper & Onion Flatbread. It’s a quick and easy meal that is packed with HUGE flavor.

You don’t need a lot of ingredients to get great taste. Just gather a few items and in about 15 – 2o minutes dinner is ready to go!

Serves: 2 – 4
Ingredients
  • 3 – 4 BellaFina™ peppers, sliced
  • 1 small onion, sliced
  • 1 tablespoon olive oil
  • salt & pepper to taste
  • 4 – 5 oz fully cooked chicken or pork sausage, sliced
  • 2 flatbreads
  • 2/3 cup marinara or pizza sauce
  • 1/2 cup mozzarella cheese
Instructions
  1. Preheat oven to 425ºF.
  2. Heat the olive oil in a medium skillet over medium high heat.
  3. Add the peppers, onions and sausage and sauté for 5 – 7 minutes until the veggies soften and the sausage begins to brown and edges crisp. Season with salt and pepper to taste. Remove from heat.
  4. Place the flatbread on a cooking sheet and spread 1/3 cup of sauce over each flatbread.
  5. Arrange the sausage, pepper and onion evenly over each flatbread. Sprinkle with cheese and bake for 10 minutes until cheese is bubbly.
  6. Cut and serve warm.

I use BellaFina™ peppers for my recipe. These little pepper are my new obsession. They are the perfect size so that you have just what you need no matter what recipe you are making. You can use only what you need without dealing with those annoying leftover pieces. After all, only a small percentage of my recipes use a whole bell pepper. With a full size pepper, I would use a portion of the pepper and store the rest in a plastic bag. That leftover piece would often get forgotten and end up being a bag of mush hiding in the bottom of my produce drawer – YUK!

BellaFina™ peppers are 1/3 the size of full size bell peppers, AND are equally less expensive. Plus, since a whole bell pepper has a much longer shelf life than a cut pepper,  the smaller size makes them ideal to keep on hand for multiple meals throughout the week. Their smaller size allows you to use only what you need without waste. You won’t have those random leftover pieces hiding in your fridge!

BellaFina™ peppers are also an affordable way to include colored bell peppers in a wide variety of recipes. I can get a whole bag of mini peppers for about the price of 1 – 2 of the larger peppers. AND…I think they make my recipes look more appealing. I love using the colored peppers instead of the alleys using those basic green peppers.

Pick up a few ingredients when you shop this week and look for BellaFina™ Peppers in the produce section at Publix. Pick up a few additional ingredients and whip up my Sausage Pepper & Onion Flatbread this week. Leave a comment and let me know what you think.
