Game Day Nacho Cheese Dip

Ingredients

2 tablespoon butter
1 jalapeño, seeded and finely chopped
3/4 cup whole milk
3/4 cup cream
2 tablespoon corn starch
1/2 teaspoon smoked paprika
4 oz cream cheese, softened
12 oz block of quality cheddar cheese, shredded (or Cheddar/Monterey Jack combo)

Instructions

Melt the butter in a medium saucepan over medium heat.
Add the jalapeño and cook for 3 – 4 minutes until tender.
Whisk in the milk, cream and cornstarch and bring to a simmer (not a rolling boil).
Once the mixture simmers, drop the heat to low and whisk in the cream cheese and smoked paprika.
Add the cheese a little at a time while stirring to combine.
Continue to cook and stir over low heat until the cheese sauce is smooth and creamy.
Serve immediately or add to a slow cooker to keep warm.

Notes

Do not use pre-shredded cheese for this recipe as the bagged cheese has anti-caking agents to prevent the cheese from sticking together. Go with a good quality block cheese and shred it yourself![br]Feel free to mix and use a combination of your favorite cheeses for this recipe.[br]Be sure to allow the milk to come to a slow simmer…not a rolling boil and then reduce your heat before you add your cheeses. You do NOT want the sauce to be bubbling or boiling when you add the cheese…this can cause a gritty texture in your sauce!
