I have some sort of Mexican dish on my menu every single week without fail. I just love the foods and flavors so I look for any opportunity to enjoy the taste whenever I can. Of course I have to keep things exciting for my guys so I am always coming up with new recipes.

Often my inspiration is something that I see online, on a cooking show or even from a place that I eat. I have a local Mexican spot that makes the most amazing food. I am talking a place that serves up hand-made tortillas, fresh guac, and phenomenal cuisine that is perfect every time you visit.

On the weekends, they have a special menu that’s filled with so many great dishes including several tasty soups. When we go, I always have a hard time deciding whether to get Carnitas Tacos or a big bowl of soup.

I got to talking to the owner and told him that he needed to do a Carnitas Soup so that I could get a combination of my favorite things and then wouldn’t have such a hard time deciding what to eat.

I was shocked when he started giving me his basic recipe for Caldo de Carnitas (Carnitas Soup)! I honestly didn’t even know it was a real thing. I happened to have some Smithfield Boneless Pork Shoulder Seasoned Carnitas that I had cooked in my slow cooker the day before, so I went home that night and tried my hand at a big batch of Caldo de Carnitas!

Now, I didn’t get measurements so I played around until I had a soup that was beyond fantastic. I did have to change the soup a bit from his recipe as I didn’t have carrots or green beans on hand. Honestly, I am not sure my guys would have eaten them anyway.

The soup was so good, I added it to my meal rotation. It’s so easy and is packed with such great flavor…I really could eat it every single week.

So when I get a hankering for this soup, I pick up a Smithfield Boneless Pork Shoulder Seasoned Carnitas and plan a trip to my fave Mexican spot and grab some salsa so I can enjoy those amazing flavors that I love!

Caldo de Carnitas (Carnitas Soup)

Serves: 8 – 10
Ingredients
  • Smithfield Boneless Pork Shoulder Seasoned Carnitas
  • 3 cups tomatillo salsa
  • 8 cups chicken broth
  • 1 teaspoon oil
  • 1 onion, chopped
  • 1 large potato, diced small
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • red onion, cilantro and limes for serving
Instructions
  1. Add the Smithfield Boneless Pork Shoulder Seasoned Carnitas and 1/2 cup of water to the slow cooker and cook on low for 6 – 8 hours.
  2. Once cooked, remove the meat and shred.
  3. Heat the oil in a large stockpot over medium heat.
  4. Add the onion and cook until translucent.
  5. Add the shredded pork, tomatillo salsa, chicken broth, potato, cumin and salt and pepper and allow to simmer 20 – 25 minutes or until the potatoes are tender.
  6. Serve topped with red onion, chopped cilantro and lime.

You will notice that there aren’t a bunch of ingredients so you have to go with quality ingredients.

You will want to choose a tomatillo salsa that you love. My fave Mexican spot has salsa down to a science so I always just grab a to-go container of their version. Plus they also have the most amazing cucumber salsa that I serve with this soup. I know…it sounds odd, but if you can find cucumber salsa—GET IT! I could drink that stuff!

  1. Thanks for the inspiration recipe. Had some leftover carnitas and broth and wanting some soup. Recipe reads like a five star, so that is my rating. Sorry to say, but no Publix in my area, so here is the best support I can give.
