Both of my guys are finally back in school. Jeb went back last week and Jake just went back a couple of days ago. All that shopping and prep to get them ready took up a ton of my time and my moolah…but, it’s finally done!
Now comes the challenge of getting settled into our new routine. Early mornings and late dinners will be my new normal, so I need to get myself psyched up for the craziness! To help make things easier, quick and easy meals will be priority for at least the first few weeks of our new schedule.
A family favorite that will definitely be on the menu at least a couple of times over the next few weeks is my recipe for Dirty Rice Stuffed Peppers. This is a super easy meal that my guys always gobble up.
To keep things simple, I opt for a boxed dirty rice mix and then stuff the mixture into deliciously sweet BellaFina™ Peppers. The sweet and crunchy pepper is the perfect container for the savory rice. The combination makes for a great meal that’s ready in a flash.
I love BellaFina™ Peppers and almost always have a bag in my fridge. BellaFina™ peppers are 1/3 the size of full size bell peppers, AND are equally less expensive. This means they are perfect to have handy for all your favorite meals. So many of the recipes I make call for the combination of onion, bell pepper and either celery or garlic. I used to spend too much on a single full-size pepper that I’d have to use little by little. I’d cut some to use, then store the rest in a plastic bag and hope I didn’t forget to use it within a few days!
But, with BellaFina™ Peppers, the peppers are the perfect size so I can just grab what I need. An un-cut bell pepper will last 2 – 3 times longer than those that are cut. So those handy little peppers mean less waste and more moolah in my pocket.

Try my recipe when you need a tasty meal on a busy day. Don’t let the time requirement scare you! Most of the time is inactive cooking where you are just waiting for that tasty meal to come together. - 1 box Dirty Rice mix
- 1 small onion chopped
- 1 pound ground beef
- 2½ cup water
- Approx 10 - 12 BellaFina™ Peppers
- 1½ teaspoon cajun seasoning
- ¼ cup parmesan cheese
- Add the onion and ground beef to a large skillet and cook until the beef has browned, stirring often.
- Drain the excess fat.
- Stir in the cajun seasoning and water. Cover and simmer for 30 minutes.
- While the dirty rice cooks, preheat oven to 375 degrees.
- Prepare the peppers by cutting them in half and removing the seeds.
- Fill each pepper with the cooked dirty rice and place in a large baking dish.
- Cover the dish with foil and bake for 20 minutes.
- Remove foil, top with cheese and serve.
