Asian Chicken Fried Rice with Peanuts

Ingredients
  • 1 package Knorr Ready To Heat Chicken Fried Rice
  • 1 teaspoon oil
  • 4 oz chicken, cubed
  • salt & pepper
  • 1 tablespoon peanuts, chopped
  • 1/2 cup broccoli florets
  • 2 tablespoons chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon Gochujang
  • 1 tablespoon rice wine vinegar
  • 1/2 teaspoon cornstarch
Instructions
  1. Heat the Knorr Ready To Heat Rice according to package instructions and set aside.
  2. Heat the oil in a non-stick pan over medium heat.
  3. Season the chicken with salt and pepper and and to pan and stir-fry until well browned, stirring often. Add the broccoli and stir fry for another 1 – 2 minutes until crisp tender.
  4. In a small bowl, whisk together the chicken broth, soy sauce, sugar, Gochujang, rice wine vinegar and corn starch.
  5. Add to the pan and cook for 2 – 3 minutes until the sauce begins to thicken,
  6. Add the rice and stir to combine.
  7. Top with the chopped peanut and serve.
