Easy Indian Curried Chicken on I Heart Publix

Easy Indian Curried Chicken

Ingredients
  • 2 bagsSuccess® Jasmine Rice, Success® Basmati Rice or Success® White Rice
  • 2 Tbsps olive oil
  • 1 lb boneless skinless chicken breast, cut into small strips
  • 1 onion, thinly sliced
  • 2 cubes chicken bouillon, crushed
  • 1 Tbsp flour
  • 1 Tbsp red curry paste
  • 2 Tbsps peanut butter
  • 1/2 cup warm water
  • 1/2 cup carrot, cut in matchstick strips
  • 2 tsps minced garlic
  • 1 can (13 1/2 oz.) coconut milk
  • 2 Tbsps brown sugar
  • 1/2 cup peanuts, crushed
  • 1 fresh cilantro leaves, chopped
Instructions
  1. Prepare rice according to package directions.
  2. Heat oil in large skillet over medium heat. Stir fry chicken and onions for 3-5 minutes. Dissolve bouillon, flour, curry paste and peanut butter in water. Add to chicken with carrots, garlic, coconut milk and brown sugar. Simmer for 10 minutes and serve over rice.
  3. Garnish with crushed peanuts and chopped cilantro.
