But, my favorite burrito bowl can be anywhere from $6 – $10…possibly more depending on the toppings that are added. That’s insane when I can whip up a delicious burrito bowl for about half that price at home in less than the time it takes for me to order and pay for a bowl at the restaurant!

Ingredients
  • 1 cup Minute® Ready to Serve Southwest Pinto Beans with White Rice and Vegetables
  • 1/2 cup cooked chicken breast, chopped
  • 1 cup lettuce leaves, torn
  • 8 – 10 cherry tomatoes, halved
  • 1 tablespoons cilantro, chopped
  • 1 tablespoon red onion, chopped
  • Cotija cheese
  • 6 – 8 tortilla chips, crushed
  • salsa
  • lime, if desired
Instructions
  1. Heat rice according to package directions and add to a large serving bowl.
  2. Add remaining ingredients and serve with your favorite salsa.
