I told you guys that I am super swamped right now. My menu this week consists of meals that can be put together in 20 minutes or less. I need all that extra time to deal with laundry, cleaning and getting caught up. I love getting away but it’s amazing how much piles up while you are gone.

I just chopped the onion and bell pepper and cooked those in a skillet with about a teaspoon of olive oil and some sliced turkey sausage. I would guess that I cooked the sausage and veggies for about 8 minutes. While those items cooked, I heated the rice. The last step was to add the rice to the pan and stir it all up.
Even a novice in the kitchen can put this one together. No need to boil water or mess up a bunch of dishes. Plus, you can change it up and use the ingredients that you like. Not a fan of bell pepper then you can add broccoli instead. Replace the sausage with some grilled diced chicken. Feel free to make it your own!
