Need a tasty meal that’s easy to make AND is also easy on the budget? My Cajun Cornmeal Chicken with Corn & Onions is the perfect option to add to your menu this week.

I have been making this recipe for years. I did Weight Watchers many moons ago while trying to lose pregnancy weight that I couldn’t drop. This recipe was one that I found on one of the member message boards and I have been making it pretty regularly ever since then. So not only does it taste great, it’s pretty easy on the ol’ waistline too.

When I saw the sale on chicken and corn in the ad I added it to my list for the week. As usual, it was a huge hit with my guys so I might be making it again next week!

I’d estimate that your total cost is under $10 for everything provided you have a few pantry staples. Plus, if you are handy with a knife, you can have this one on the table is about 20 minutes. It’s a super meal even on a busy weeknight.

Cajun Cornmeal Chicken with Corn & Onions

Ingredients
  • 1 pound thinly sliced chicken breast fillets
  • 1/4 cup white corn meal
  • 1 tablespoon cajun seasoning
  • 3 tablespoons butter or spread (I use a light spread)
  • 1/2 cup onion, chopped
  • 1 cup fresh corn kernels
  • 1 bell pepper, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup chicken broth
  • 1 teaspoon corn starch
Instructions
  1. Mix corn meal and cajun seasoning in a large zip bag.
  2. Place chicken in the bag and shake to coat.
  3. Melt 2 tablespoons of butter in a large skillet.
  4. Add seasoned chicken and cook 4 minutes on each side or until done.
  5. Remove chicken and keep warm.
  6. Add 1 tablespoon of butter to the skillet and melt.
  7. Add corn, onions and bell pepper and cook until tender – about 5 minutes.
  8. Add salt and pepper.
  9. Combine corn starch and chicken broth then add to vegetable mixture.
  10. Cook over medium heat until thickened.
  11. Serve veggies over chicken.
