- 3 Tbsps light brown sugar
- 2 Tbsps soy sauce
- 2 Tbsps fish sauce
- 2 Tbsps lime juice
- 1 Tbsp chili garlic sauce
- 2 Tbsps vegetable oil, divided
- 1 egg, lightly beaten
- 1 Tbsp minced garlic
- 1 lb medium shrimp, peeled and deveined
- 3 green onions, thinly sliced
- 1 cup bean sprouts
- 2 Tbsps dry roasted peanuts, chopped
- ¼ cup fresh cilantro leaves, chopped
- lime wedges
- Prepare rice according to package directions.
- In a small bowl combine brown sugar, soy sauce, fish sauce, lime juice and chili sauce. Heat ½ tablespoon oil in a large wok or skillet over high heat. Quickly scramble egg and remove from pan. Add remaining oil to wok and add garlic and shrimp and stir-fry 5 minutes, or until shrimp are just cooked. Add reserved sauce and cooked rice and stir-fry 2 minutes. Add onion and reserved egg and toss to combine.
- Top rice with bean sprouts, peanuts and cilantro. Serve with lime wedges.
