Besides being easy to prepare, delicious, and super versatile, rice is also extremely economical. It was one of the foods I depended on back in my college days when money was extremely tight. I could stretch a 79¢ bag of rice for a week or more and still have a delicious meal every single night.

I may have a little more money in my wallet now. But, I still look to rice to help me keep my food budget as low as possible.

Picadillo is a traditional dish in many Latin American countries and the Philippines that is similar to hash. There are many different varieties of this classic meat and potato dish. Often you will find raisins or olives added. I happen to love mine with a handful of salty green olives. But, my guys aren’t as keen on olives so I am sharing a basic recipe that was given to me years ago by a dear friend. If you are an olive fan…go ahead and throw them in before serving.

Served over a big helping of Mahatma rice, Picadillo is a perfect weeknight meal that your whole family will love.
Mexican Picadillo on I Heart Publix

Mexican Picadillo

  • 1/2 lb. ground beef
  • 1/2 lb chorizo
  • 1 large potato, cut into small cubes (about 1 cup)
  • 2 carrots, sliced or cut into small cubes
  • 1 onion, chopped
  • 4 garlic cloves
  • 1 cup of beef or chicken stock
  • 14.5 oz can fire roasted tomatoes
  • 1/2 jalapeño, seeded and membrane removed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups Mahatma Jasmine Rice, cooked accordingly to package directions
  • Cilantro for garnish
  1. Add tomatoes, 2 clove of garlic, 1/4 of onion and the jalapeño to a blender or food processor and pulse until pureed. Set aside.
  2. While the rice is cooking, brown the beef and chorizo in a large skillet over medium high heat.
  3. Drain any excess fat and add the remaining chopped onion, potatoes, carrots and 2 cloves of chopped garlic to the pan and cook for 2 -3 minutes until the onion is translucent and garlic is fragrant.
  4. Add the tomato mixture, stock, chili powder, salt, pepper and bay leaf to the pan and simmer for 20 – 25 minutes until the potatoes are cooked through and most of the liquid has been absorbed.
  5. Remove the bay leaf and season with additional salt and pepper to taste.
  6. Serve over hot Mahatma Rice and garnish with fresh cilantro if desired.
You can leave out the chorizo and increase the ground beef to a full pound if desired.[br]Green olives or raisins can be stirred in before serving if desired.
