Well, Easter is over and now it’s time to start the countdown to Cinco de Mayo!

I really don’t need much of an excuse to gather friends together for a fun fiesta night. So, Cinco de Mayo gives me a reason to celebrate and enjoy lots of my favorite foods.

I love pretty much all Mexican foods and flavors, so I always take the opportunity to stock up on lots of great foods to help me create the meals that I love. Publix has everything I need to put together all of our family favorites as well as any new recipes that I find.

I spotted a bunch of tasty options on the Ready.Plan.Save website that I think will be a hit at my upcoming gathering. Of course, I need to try out any new recipes before I serve them up to my guests. So, I already put all the ingredients for the Beef and Queso Burritos on my shopping list and will be serving them up a little later in the week. A tortilla filled with beef, beans, rice and cheese is right up my alley! Paired with a cold Dos Equis and it may be the ultimate Friday night fiesta! My mouth is watering just thinking about that tasty meal.

Check out the recipe below and add it to your menu for the week. You’ll also find these other tasty recipes that would be great for a busy weeknight meal AND for your Cinco de Mayo celebration.
