Easy Seafood Fettuccine

Ingredients

1 8.8oz box of Ronzoni Homestyle Fettuccini, cooked al dente (approx 5 min)
1 tablespoon butter
1 shallot, chopped
2 garlic cloves, minced
1 6.5oz can of chopped clams + 1/4 cup of reserved clam juice
1 pound shrimp, peeled and deveined
1/2 cup chicken broth
3/4 cup milk
1/3 cup parmesan, shredded (+ more for garnish)
1 tablespoon fresh parsley, chopped
1 tablespoon fresh lemon juice
salt & black pepper to taste

Instructions

Melt butter over medium heat in a large skillet.
Add shallot and cook for 2 minutes.
Add the garlic and cook an additional minute, until fragrant.
Add shrimp and clams and cook for another 4 minutes, stirring occasionally.
Pour in chicken broth, milk, reserved clam juice, lemon juice, parmesan and parsley.
Season to taste with salt and pepper/
Simmer for 3 – 5 minutes then toss with cooked Ronzoni Homestyle Fettuccini.
Garnish with more parsley and parmesan cheese if desired.
