Asian BBQ Tacos

Ingredients
  • 2lb Smithfield Sweet & Smoky Fresh Pork Roast
  • 1/2 cup hoisin sauce
  • 2 tablespoons sherry cooking wine
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 garlic cloves, crushed
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons brown sugar
  • 1 1/2 tsp Chinese five-spice powder
  • corn tortillas
  • 2 cups cabbage, shredded
  • 1 carrot, julienned
  • 2 tablespoons fresh cilantro, chopped + additional for serving
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons soy sauce
  • 1/2 teaspoon red pepper flakes
  • salt & pepper to taste
Instructions
  1. Place pork roast in the slow cooker.
  2. Whisk together the hoisin sauce, cooking wine, 1/4 cup of soy sauce, honey, garlic, ginger, brown sugar & Chinese five-spice powder and pour over pork.
  3. Cook on low for 6 – 8 hours.
  4. About 15 minutes before serving, make the slaw by whisking together the rice wine vinegar, 2 tablespoons soy sauce and red pepper flakes. Mix with cabbage, carrots and cilantro and season to taste with salt & pepper. Allow to sit for 10 minutes until ready to serve.
  5. Shred pork and mix with 1/2 cup of cooking liquid.
  6. Serve shredded pork on corn tortillas topped with slaw and fresh cilantro.
