Ok guys—we are heading into the holiday season. If you thought you were busy now…just wait! Over the next couple of months things will get incredibly hectic and you may find that you don’t have enough time to put a dent in your massive weekly to do list!

Don’t panic! When things get busy, we just have to get organized and make a plan. I find the easiest place to start is with the with meal planning. This time of year, I try to do a lot of one pot meals, casseroles, soups, chilis and things that can either be made ahead to save time OR things that don’t require a ton of ingredients to save money.

Recipes like the one I have for you today will help you get through the madness…I promise. This recipe came together with a little inspiration from a friend plus an added pinch of my own laziness.

My friend and I share tips and recipes all the time. One day she shared a delicious variation on a Shepherd’s Pie that she made using meatballs. I thought it was so creative and sounded so good. Definitely something my meatball fanatics would enjoy.

I had almost forgot about her recipe, but then it hit me as I was staring into my freezer looking at a bag of Armour Meatballs trying to come up with dinner ideas!

Now at this point in the day, I didn’t have time to do her homemade recipe. So, I decided to improvise with what I had on hand! Turns out, my Shortcut Meatball Shepherd’s Pie was fantastic and the perfect option for dinner in a pinch!

I shared the recipe with my friend and she is adding it to her recipe this week. With the BOGO sale on Armour Meatballs, how can you pass up such a quick, easy AND economical meal option?

Shortcut Meatball Shepherd’s Pie

Serves: 6 – 8
Ingredients
  • 20 oz bag of Armour Meatballs, defrosted according to package instructions
  • 1 teaspoon butter
  • 2 tablespoons onion
  • 1 teaspoon Worcestershire Sauce
  • 1 cup prepared beef or brown gravy
  • 1 cup frozen peas and carrots
  • 2 cups mashed potatoes
Instructions
  1. Preheat oven to 375º F
  2. Melt the butter in a large skillet and cook the onions until translucent, about 2 minutes.
  3. Mix in gravy, Worcestershire sauce, veggies and Armour Meatballs to pan cook for 2 minutes.
  4. Pour the mixture into a 11×7-inch casserole dish and top with mashed potatoes.
  5. Bake for 15 – 20 minutes until heated through.
  6. If desired, place under a broiler until potatoes begin to brown.

Just a tip…make sure you use a good gravy that you know you like. I made a second batch with a brand that I had never tried before and my guys did not like it nearly as well! So, I’ll go back to our preferred brand. You can use a jarred gravy or a couple of packets prepared according to directions…just use something tasty!
