- 1 pie crust baked (9 inch)
- 3 egg yolks, beaten*
- ¾ cup Truvia® Cane Sugar Blend
- 5 Tbsp cornstarch
- ⅓ cup unsweetened cocoa powder
- ½ tsp salt
- 3 cups skim milk
- 1 Tbsp butter
- 2 tsp vanilla extract
- ½ cup whipped topping, low fat
- In a large mixing bowl, by hand, mix together eggs yolks and Truvia® Cane Sugar Blend.
- Mix in cornstarch, cocoa powder and salt.
- Gradually add the milk to the mix.
- Pour into a saucepan and cook over medium heat, stirring constantly, until comes to a boil.
- Remove from heat.
- Add butter and vanilla extract.
- Cool slightly.
- Mix in whipped topping.
- Pour mixture into a cooled baked shell.
- Chill before serving, at least 1 hour, and refrigerate any leftovers.
