Back to school can be a bit chaotic so I look for any opportunity to save the big three—time, money AND sanity! Those are typically the three things that I struggle to hold on to this time of year.

This will be the first full week of school for my youngest kiddo. He went back last week but it was only for a couple of days. Football also started up so things were busy! While I only had a taste of my new schedule, it was enough to motivate me to get back into some heavy meal planning!

I find that when I take the time to write down my menu, I save time and money. There’s no last minute rushing around or multiple trips to the store because I need a missing ingredient. I am able to plan ahead and have everything on hand when I need it. That means less stress which makes me a very happy gal!

This time of year I am all about meals that are quick and those that I can prep ahead of time. I know there are lots of you in the same boat as me so I thought I would share one of my family’s all time favorite recipes. This one would probably be on my meal rotation every single week if it were up to my guys. I have to admit that it’s one of my favorites as well…both for how it tastes and how crazy simple it is to make.

Easy Meatball Pie only requires four ingredients and about 5 minutes of prep time. You then toss the pie in the oven to bake for about 35 minutes and you are ready to roll!

Now before you shake your head and think there is no way that this recipe can taste good with only four ingredients…it’s all about those meatballs! I choose Cooked Perfect® Meatballs for this recipe as they are perfectly seasoned and bring big flavor to what would otherwise be a super simple dish. Easy Meatball Pie

Ingredients
  • 32 [i]Cooked Perfect[/i] Homestyle Meatballs (half bag)
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 2 refrigerated pie crusts
  • fresh basil, if desired
Instructions
  1. Preheat oven to 425º F.
  2. In a large bowl pour marinara over [i]Cooked Perfect[/i] Meatballs and stir to coat the meatballs. Mix in a tablespoon of chopped fresh basil if desired Set aside.
  3. Fit one pie crust into a standard pie plate.
  4. Pour the meatballs into the pie shell.
  5. Cover with the shredded cheese.
  6. Place second pie crust on top and press the two crusts together then crimp to seal the edges.
  7. Bake in 450º oven for 35 minutes or until crust is golden brown.
Notes
To create individual pies, simply cut pie crusts to fit into four 5″ foil pans and divide the filling accordingly. Bake time will decrease by 5 – 7 minutes.
