Easy Barbecue Pork Pizza

Serves: 4 – 6
Ingredients
  • Smithfield® Boneless Pork Shoulder Seasoned Carnitas
  • 1/2 cup water
  • 1 can of refrigerated pizza dough
  • 1/2 cup barbecue sauce
  • 8 oz mozzarella cheese, shredded
  • fresh cilantro,
  • red onion, thinly sliced
Instructions
  1. Place the Smithfield® Boneless Pork Shoulder Seasoned Carnitas in a 2 – 4 quart slow cooker and add the water. Stir to break up the meat.
  2. Cover and cook on low for 6 – 8 hours (high 4 – 5).
  3. Pour off all but 2 tablespoons of cooking liquid and shred the meat.
  4. Divide the meat in half, only one portion will be used for the pizza. [i]The other half can be used for another recipe such as my Easy Baked Carnitas Empanadas.[/i]
  5. Preheat oven to 425ºF
  6. Unroll the pizza dough and cut in half lengthwise.
  7. Place each piece on a paper lined baking sheet and roll or stretch the dough to fit the pan.
  8. Spread 1/4 cup of barbecue sauce over each dough sheet.
  9. Evenly top with shredded pork, cheese and thinly sliced onion.
  10. Bake in 450º F oven for 12 – 16 minutes or until crust is golden and cheese is bubbly.
  11. Top with fresh cilantro leaves before serving.
