Easy Baked Carnitas Empanadas

Ingredients
  • Smithfield® Boneless Pork Shoulder Seasoned Carnitas
  • 1/2 cup water
  • 1 package (14 oz. ) frozen empanada discos, thawed
  • 1 egg, slightly beaten
  • 3/4 cup salsa verde
  • 8 oz Quesadilla or Mozzarella Cheese, shredded
  • 2 tablespoons finely chopped onions
  • small bunch of fresh cilantro, chopped (approx /1/4 cup)
Instructions
  1. Place the Smithfield® Boneless Pork Shoulder Seasoned Carnitas in a 2 – 4 quart slow cooker and add the water. Stir to break up the meat.
  2. Cover and cook on low for 6 – 8 hours (high 4 – 5).
  3. Pour off all but 2 tablespoons of cooking liquid and shred the meat.
  4. Divide the meat in half, only one portion will be used for the empanadas. [i]The other half can be used for another recipe such as my Easy Barbecue Pork Pizza.[/i]
  5. Preheat oven to 425° F.
  6. Add the shredded pork, salsa, onion and cilantro to a large bowl and mix to combine.
  7. Lightly roll empanada discos to 5 inches. Into centers of discos, evenly spoon meat mixture.
  8. Sprinkle with shredded cheese, dividing evenly.
  9. Brush edges of discos with water, then fold discos in half over filling, crimping edges to seal.
  10. Brush tops with egg and bake 20 minutes or until golden. Serve empanadas with additional salsa if desired.
