I have a kitchen and pantry full of gadgets that are supposed to make my life easier. But if I have to spend time getting them out and assembling them to use them…plus spending more time to clean them up, exactly how is that easier?

I’ll share one of my favorite time-saving tips that comes in handy all the time. Often when a recipe calls for you to use your food processor to do a rough/course crush of nuts, candies, crackers and the like…don’t bother pulling it out. Instead, grab a Ziploc® brand bag and a rolling pin and you can be ready to go in a flash!

There’s no assembly required and no sharp blades to contend with. Plus, smacking that rolling pin against the bag can help you vent any frustrations you might have.  When you are done, you don’t have to bother with disassembling a machine and there’s no clean up. Just toss the Ziploc® brand bag into the trash and continue on with your recipe…easy breezy! Now, you may not be able to use this method in all your recipes…but it can come in handy for many different recipes and meals!

Speaking of recipes, here’s one of my family’s favorites that is on our menu quite often – Pretzel Crusted Chicken! Stop by Publix and pick up all the ingredients you need for a delicious meal that is sure to please even your pickiest eater!

Pretzel Crusted Chicken

Ingredients
  • 1/4 – 1/2 cup flour
  • 1 cup panko breadcrumbs
  • 1 cup pretzels
  • 4 thin chicken fillets
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup honey
  • 5 tablespoons dijon mustard
  • 1 1/2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil, divided
Instructions
  1. Preheat oven to 400 degrees
  2. Place pretzels in a Ziploc® brand bag and gently pound with a rolling pin until coarsely ground. You will have a combination of crumbs the size of traditional breadcrumbs and those the size of panko breadcrumbs.
  3. Mix the pretzels with the panko and set aside in shallow bowl or plate.
  4. Place the flour in a separate shallow bowl or plate.
  5. Place honey, dijon, vinegar and 1 tablespoon of olive oil in a bowl and whisk until combined.
  6. Pour about half the dressing into a shallow bowl or plate and reserve the rest.
  7. Season chicken with salt and pepper before dredging.
  8. First dip the chicken into the flour, covering all surfaces. Shake off any excess.
  9. Next dredge the floured chicken in the honey mustard dressing.
  10. Finally, dip the coated chicken in the breadcrumb/pretzel mixture pressing the crumbs onto the chicken
  11. Heat the remaining tablespoon of oil in an ovenproof skillet over medium heat.
  12. Place the coated chicken in the hot oil and cook on one side for 3 – 5 minutes.
  13. Use a spatula to flip the chicken and place into a preheated oven for 18 – 20 minutes (or until internal temp of 145 degrees).
  14. Remove from oven and serve with reserved honey mustard dressing.
