Bruschetta Chicken Meatball Bites

Ingredients
  • Mighty Spark Bruschetta Ground Chicken, 1 lb.
  • 1/4 cup panko breadcrumbs
  • 1 egg white
  • 8 oz jar of sun dried tomato pesto
  • 8 oz cream cheese, softened
  • French bread, sliced
  • olive oil
  • parsley, if desired
Instructions
  1. Place the ground chicken, breadcrumbs and egg white in a large bowl and mix until combined. Roll the meat into 1/2 inch meatballs and set aside.
  2. Heat 1 teaspoon of olive oil in a large skillet and cook the meatballs, turning frequently until browned and cooked through – approximately 5 – 7 minutes.
  3. Drain on a paper lined plate.
  4. Add the cream cheese and pesto to a small bowl and mix to combine.
  5. Spoon a dollop of the mixture onto a slice of French bread and top with a meatball.
  6. Top with parsley if desired and serve.
