Jack-O’-Lantern Mini Pies – Perfect Seasonal Recipe With The Comstock® Simply Filling & Topping Sale At Publix

Weekends at my house are always crazy. It’s not unusual for us to have picked up an extra houseguest…or three 😉 A house full of boys can be chaotic but I know how to get their attention. I gather them in the kitchen to help me cook!

When you have a bunch of kiddos in the kitchen, a simple recipe is always the best option. This past weekend, I decided to let the boys raid my pantry and choose their favorite Comstock® Simply Filling & Topping and cook up something sweet. With only a few ingredients, we made the most adorable Jack-O’-Lantern Mini Pies. 

Jack-O’-Lantern Mini Pies
Ingredients
  • 1 can (21 oz.) Duncan Hines Comstock® Simply Cherry Filling & Topping
  • 1 box refrigerated pie crusts (or scratch recipe for a double crust)
  • 1 egg
  • 1 Dash of milk
  • 4 5-inch foil pie pans
Instructions
  1. Preheat oven to 425°F.
  2. Unroll pie crusts onto work surface. Press crust into 5-inch foil pie pans and cut away the excess.
  3. Fill pies with about 1/2 cup of pie filling.
  4. Using a foil pie pan as a guide, cut out 4 top pie crusts.
  5. Cut triangle eyes and nose, plus a toothy smile.
  6. Lightly beat the egg with a dash of milk. Brush egg and milk mixture onto the edges of the pie. Place the decorated pie crust on the pie and crimp the edges. Brush the entire pie with the egg mixture.
  7. Place pies on a baking sheet and bake 25 to 30 minutes or until crusts are golden brown and fruit is bubbling.
  8. Baking Tip: You can use the pie crusts as is, but for a thicker crust, ball up the pie crusts and re-roll out onto work surface.

This is such a great seasonal recipe. You can customize the pies based on your taste and decorate with fun and unique faces.

We started by cutting the dough to fit the pans. Once that was done we filled them with our favorite Comstock® Simply Filling & Topping. Then the fun started. I gave the boys toothpicks and let them make fun faces for their pies.

Since there’s no right or wrong way to make a jack-o-lantern, the boys all came up with something different. I looked over and had to giggle as Jeb’s Jack o’ Lantern morphed into Spiderman!
