Believe it or not, Thanksgiving is less than two weeks away! Soon we will be welcoming friends and family into our home to sit and share some tasty foods.

That means it’s time to start getting your menus ready. Yes, I said menus…

While Thanksgiving is only one day, if your friends/family are anything like mine, they don’t just come for one meal and leave. I might have people at my house for almost a week! That means I have to be ready to feed lots of folks three meals several days in a row.

Naturally I want to be able to spend as much time with my guests as possible so I opt for meals that are easy but still taste great. Casseroles are always a good option as they don’t take a ton of effort and they feed a lot of folks. One of my favorites is this recipe for Baked Hash Brown Casserole.

This is a family favorite and makes everyone at my house happy! I love it for the taste and the fact that it’s simple to make. Plus it serves a large group and tastes great whether you serve it for breakfast, lunch or dinner.

In addition to the great taste and easy prep, this one is easy on the budget thanks to the sales available at Publix. Look for the following items to be on sale Buy One, Get One Free through 11/22 (11/21 for some) at Publix –

  1. This sounds great! I have a diabetic in the family so I’m going to replace the hash brown potatoes with riced cauliflower and add some shredded chicken to up the protein. I’m always looking for a great recipe. Thanks!
