There are many days that I just want to skip dinner all together. It could be an exceptionally busy day or  just a day when I have too much on my plate to deal with spending a ton of time in the kitchen. Instead, I have a list of recipes that I can whip up and have on the table in minutes. One of my absolute favorites is Easy Red Beans & Rice. It requires very few ingredients and can be on the table in about 15 minutes. It comes together thanks to a couple of cans of beans and the quick, convenience of Veetee Rice!

Now I have a slow cooker version of this recipe but it takes some forethought. Obviously I don’t always know when my day is going to be chaotic so planning ahead sounds good but isn’t always what happens! Having a few key ingredients handy means that this one is a practical option for a tasty meal on a crazy day.

Easy Red Beans & Rice

Ingredients
  • Tray of Veetee Rice
  • 1 teaspoon olive oil
  • 1/2 pound of smoked sausage or andouille, cut into slices
  • 1/2 green bell pepper, chopped
  • 1 small onion, chopped
  • 1 – 2 celery stalks, chopped
  • 2 cloves of garlic, chopped
  • 1 tablespoon creole seasoning
  • Two 16 oz cans of red beans
  • 1/2 cup of chicken stock
  • 5 – 8 dashes of hot sauce
  • green onion, sliced for garnish
Instructions
  1. Heat the oil in a large skillet over medium high heat.
  2. Add the sausage and cook for 3 minutes until lightly browned.
  3. Add the veggies and cook for an additional 2 – 3 minutes until softened.
  4. Add the chicken stock, hot sauce, creole seasoning and beans and then cover and simmer for 10 minutes, stirring occasionally.
  5. Meanwhile heat the Veetee Rice according to package instructions.
  6. Serve the beans with a scoop of the heated rice and top with green onion if desired.
