Now I know you all like a big cup of coffee but don’t forget that coffee is great in ton of tasty recipes. With football season about to start up, I have a fabulous recipe that you can whip up in a flash. This Black Bean Queso Dip recipe is super simple to make and will be a hit at your next gathering.

Black Bean Queso Dip

Serves: 12 – 16
Ingredients
  • 1 tbsp. olive oil
  • 1 small yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 (16-ounce) cans refried black beans
  • 1 (8-ounce) package cream cheese, softened
  • 2 tbsps. ground Community® Breakfast Blend coffee
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1 (8-ounce) block Monterey Jack cheese, shredded
  • 1 large tomato, chopped
  • 1 avocado, pitted and sliced
  • ¼ cup fresh cilantro leaves
  • 1 large bag corn chip scoops
Instructions
  1. Preheat oven to 350°.
  2. In a large ovenproof skillet, heat oil over medium-high heat. Add onion and garlic; cook until tender, 4 to 6 minutes. Stir in beans, cream cheese, ground coffee, cumin and chili powder. Top with Monterey Jack cheese, leaving a border around edge of pan.
  3. Bake until bubbly and cheese is melted, 20 to 25 minutes. Top with tomato, avocado and cilantro. Serve with corn chips.
