Baked Sausage & Tomato Omelet

Ingredients
  • 6 Pure Farms Original Sausage Links, heated according to package instructions and chopped
  • 1 teaspoon butter, melted
  • 6 large eggs
  • 1/4 cup spinach
  • tomatoes, sliced
  • 4 oz feta, crumbled
Instructions
  1. Preheat oven to 400ºF.
  2. Melt butter in a large oven safe skillet.
  3. Whisk eggs until fluffy and pour into the skillet.
  4. Sprinkle in the spinach, feta, chopped sausage & sliced tomatoes.
  5. Bake in 400ºF oven for 25 minutes or until the eggs are set.
  6. Slice and serve.

My Baked Sausage & Tomato Omelet is a super simple recipe that you can do pretty much any day of the week. All you have to do is throw everything in a pan and then just pop it in the oven. No need to cook up a bunch of individual omelets and spend all that time at the stove. You get the same delicious taste with almost no prep and basically no active cooking. This is one of my favorite things to make when I have a large group of folks. I can do two pans and feed a big group with very little effort.

PLUS…it is just as easy to do the opposite. If you are like me and get a rare occasion when you have the house to yourself and just need breakfast for one, you can whip up an easy single omelet in a flash. I like to do a three egg white omelet using Pure Farms Sausage. It’s basically the same recipe with the exception of using three egg whites, two sausage links, a few topping and then reducing the bake time to about 12 – 15 minutes.
