Hearty Breakfast Tart

Weekday mornings are usually very hectic at my house. I am not typically at my best in the morning. While I can stay up all night with no problem … getting up is just not my cup of tea.

Some days I’d love to hit the snooze button about ten times but I have to get the boys up and going and ready for a successful school day. Honestly, with the size of my daily to-do list, if I dared sleep in I would never get everything accomplished each day! Luckily I have a nice list of breakfast meals that I can whip up in a flash.

The boys have begun TCAP testing and on the mornings that I know they are going to be dealing with those tests, I make sure they have a big, protein-packed meal for breakfast. It’s my little way of giving them a boost so that they’ll be test ready.

Since I have a lot on my plate in the mornings, I opt for an easy breakfast tart as a way to give them all their favorite things in one tasty dish. My Hearty Breakfast Tart is the ultimate meal that is easy for me to prep and tastes amazing. The boys get a combination of delicious Greenfield Bacon, eggs, cheese and potatoes in a tasty crust. It combines everything they love and I save time not having to be a short order cook.

I’ll typically take about 10 minutes to get this dish prepped and then slide it in the oven before I wake the boys. By the time they get up, dressed and gather all their things needed for the day, the tart will be ready to go.

Of course this isn’t just a breakfast dish. I’ll often serve it for brunch and it’s an awesome dinner option too. You’ll love how easy this is to make. You don’t have to be an expert in the kitchen to serve up a delicious meal that’s sure to please the whole family.

Hearty Breakfast Tart

  • 4 slices Greenfield Natural Meat Co. Bacon
  • 4 large eggs
  • 1/2 cup milk
  • 4 oz Fontina cheese
  • 1 cup Potatoes O’Brien
  • 1 refrigerated rolled pie crust
  • salt & pepper to taste
  1. Preheat oven to 400ºF.
  2. Press the pie crust into a 12″ tart pan. Trim off any excess dough.
  3. In a large skillet, cook the Greenfield Natural Meat Co. Bacon until crisp.
  4. Remove the bacon to a paper lined plate and crumble when cooled.
  5. Discard all but about 2 teaspoons of the bacon grease and then cook the Potatoes O’Brien over medium heat for about 3 – 5 minutes until lightly browned.
  6. In a large bowl, whisk together the egg, milk, and salt & pepper.
  7. Pour the egg mixture into the prepared tart crust.
  8. Evenly sprinkle in the cheese, crumbled bacon and potatoes.
  9. Bake in a 400ºF oven for 20 minutes or until set.
  10. Cut into wedges and serve warm.
