Mexican Pasta Bake

Ingredients
  • 1 pound ground chorizo sausage
  • 1 jar RAGÚ® Homestyle Thick & Hearty Traditional
  • 1 can fire roasted corn 15.25 oz, drained
  • 1 can seasoned black beans, 15 oz, drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 cup cilantro, chopped
  • 8 ounces Mexican blend cheese, divided
  • 8 oz ziti
  • sliced black olives, chopped tomatoes, chopped green onions & additional chopped cilantro for garnish
Instructions
  1. Preheat oven to 375º F.
  2. Cook pasta according to package instructions and set aside.
  3. Add chorizo to a large skillet and cook and stir over medium heat, until browned and crumbly.
  4. Drain any excess fat and then add the RAGÚ® Homestyle Sauce, corn, beans, chili powder, cumin, garlic powder and salt.
  5. Simmer for 3 minutes then add the chopped cilantro, cooked pasta and 6 oz of the cheese.
  6. Remove from heat and pour into a casserole dish.
  7. Top with remaining cheese and bake at 375º F for 15 minutes.
  8. Serve topped with black olives, chopped tomatoes, chopped green onions & additional chopped cilantro.
