Keeping up with my boys’ schedules can be next to impossible. Have you noticed that most all activities are typically scheduled around dinner time? Football practice, karate, tutoring sessions, music lessons and the like typically begin around 6 pm…which is the time I want to put dinner on the table!
Now I haven’t mastered the skill of being in two places at once, so I typically try to feed my crew before we head out to those extracurricular activities. Sometimes that’s just not a possibility and we have to eat when we get home. On those days, I need meals that I can pull out and serve right after we walk in the door. One of my favorite things to make is a pasta salad. I can prepare it ahead of time and pull it out of the fridge whenever we are ready to eat.
I have several recipes that I rotate but the one I am sharing today is my all-time favorite summer recipe. I had a neighbor bring me a huge bag of tomatoes and cucumbers from his garden so I knew it was time to whip up a batch of Tomato-Basil Pasta Salad!
I love to use Buitoni® Refrigerated Pasta for this recipe. It tastes fantastic and is ready in just minutes. I can put on a pot of water to boil and have all my ingredients chopped by the time the pasta is done. So my pasta salad is ready in a flash!
